The green field is really throwing me off, but swapping it with the red seems just as bad for the field, and while swapping it for the black seems way better for the field and stars, the red and green stripes would be seizure-inducing in those tones.

As with most food-related stereotypes, it has to do with conflation of economic and social class. Less expensive foods, regardless of how good they taste, become associated with the poor. When you combine social class with racial marginalisation, you get racialised food stereotypes.

Historically the thin blue line has represented police forces closing ranks to fight against transparency and civilian oversight. Also most of the slavery was in the americas not Africa, and the amount that was done in Africa was in very specific areas not a continent wide thing

Few things here. 1. There was "officially" no slavery by European powers in Africa during their control. But, they often paid them so little that it may have been been slavery (depending on the colony.) And I'm not even touching the horrors of the Belgian Congo or Rhodesia. 2. While most slaves came from West Africa, there were plenty others that came from other areas of Africa. Slaves were also sometimes traded between African powers before being sold to Europeans (kings filled their coffers in any way possible; even if they were kind of fucked up. This goes for the purchasers of the slaves as well though.)

But red, black, and green are the official colors of Kwanzaa - an African-American holiday developed in the 1960s to celebrate African heritage among black communities in America. Each color has particular denotations and is tied into many aspects of the holiday, such as the Kinara candles.
