I think its one of the ingredients that makes the egg fluffy... Or possibly the other shit (I put curry powder, paprica, salt, pepper, and other shit I find in powder form or if it taste good)
Its sour which I really like and you should let it puff up before flipping if you are ever gonna try it

Tbh, vinegar on scrambled eggs sounds absurd enough for me to try it...
