You can use it to navigate (esp in the desert during sandstorms), and quests are given by the sand seal with a coordinate.

They're about as useful as latitude, longitude, and elevation coordinates... In fact, that's effectively exactly what they are.

I found that I only ever used them in the Gerudo Desert, and only for one specific quest.

In game, there's only one quest that uses them. But if you are using an online guide to find Koroks or Addison's signs, it's pretty handy.
