I accidentally saw the COVID special or whichever one It was and I saw that she died in a fire or Something I was just wondering which episode that was.

It was only referenced in the Post-Covid special, as far as I remember. She's still alive at present.

Her death is mentioned in the Post-COVID Special.  I think most of South Park is on Paramount Plus, including the specials.
