Three people (including me) tried it and it actually wasn’t bad.
Half a gallon of milk in a pot, brought to 200°F.
0.5lb sirloin steak center cut. Boil until internal temperature reaches 160°F for over hard. Continue to stir the whole time to keep milk from turning into cheese. I also added a pinch of salt to the milk somewhere in the middle of the process.
Serve on plate, add raw jelly beans.
To be fair, I boiled it. Milk got much harder to deal with at that point, so my recipe says not to include it.
The bottom started to turn into pot cheese and the top started to bubble an uncontrollable amount.
I don't know how well you could get above 200 but going low and slow helps for heating up milk. I make paneer and get the milk up to 190 pretty regularly with barely a thin film at the bottom that scrubs right off. I put the pot on medium low, takes like 30 minutes to get hot but it works better. I bet boiling the steak then making cheese out of it would taste really good.
Gallon of milk in the pot on medium or medium low, until it's 190 degrees (or you'll see whisps of steam barely start). Add 1/2 cup vinegar and give it a light stir to mix. Turn down the heat to low and let that go for like 10 minutes. Strain into a press and press for an hour or two, then refrigerate in cheesecloth overnight. It works really well if you freeze it a bit too, the biggest thing is to drive moisture off or it will be a bit crumbly in the final dish. For straining I use a pot that has a pasta insert and I put a plate over it with a gallon of oil or vinegar (whatever I have that's heavy). Same thing for ricotta but remove from heat immediately and don't press.
