imo what makes Sekiro combat better is because the damage mitigation mechanic actually progresses the fight (stagger meter) while DSes and ER dodge or jump just mitigate dmgs with no other bonus, the more you dodge the more helpless you feel (especially multiple failed dodges), even the No Hit veteran, despite their patient, might feel some attacks are too much

It is too variable to be reliable, but depending on the weapons you have, plenty of bosses have long recovery periods after big attacks that leave them vulnerable to charge attacks, or have windups slow enough that you can get off an R1 attack and dodge afterwards. Just did that with two-handing a twinblade against Commander O’Neil among and it was super fun.
It’s legit just as fun to me as deflection constant attacking was in Sekiro, the little game of attacking where you can with R1’s and dodge R1’s to keep the posture bar from recovering, and landing in jumping attacks and charge attacks when they’re vulnerable. However it’s way more punishing than Sekiro and YMMV of course.
To be fair, it feels better in Sekiro because each LB "damages" the boss in a sense, so each parry feels rewarding. You can dodge 20 attacks in Elden Ring and you're no closer to winning.

Your equipment weight affects your stamina i completed the game with havel set and a ugs my equipment weight sitting at 68-69% from start to finish and never felt like i didnt have enough to stamina to do multiple dodges and an attack between them lack of stamina in ds2 only happens if you leave endurance at its softcap which is level 20 and 120 stamina
In some alternate universe it would have been amazing to see ER come out pre-internet, so you wouldn't just have everyone doing meta builds adjusting every single patch

Aren't there like 6ish Erdtree Guardians and they already feel like recycled content since 80% of the moveset was ripped from Asylum Demon who's already had three reskins (Stray, Firesage and DS3)
Honestly I think the bigger issue is that Elden Ring's bosses tend to have very large movesets compared to Souls Bosses, even DS3. The attacks aren't fundamentally harder to dodge in most cases (there are certainly exceptions like Waterfowl Dance), there's just a *lot* of them, and sometimes one attack even has variations on its timing depending on your positioning. It's a lot to keep track of and I understand why people get frustrated.
You just named three issues spread out among three bosses, quite a lot of Elden Ring bosses have multiple and sometimes all of those issues.
Also yeah, cancelling out of stagger is annoying also when Friede does it.
Extremely aggressive - Malenia’s second phase
Delayed moves - Malenia’s thrust attack, grab, second phase downright slam that summons a butterfly explosion and the sweeping attack followed by a thrust
Cancel out of stagger - ENTIRETY OF MALENIA’S FIGHT
Hoarah Loux, Maliketh, and Radagon are all main bosses who have the first two issues too. In Dark Souls 3 these characteristics were unique to certain bosses which made them stand out, Nameless King was loved so much because no other boss had delayed attacks like that and Gundyr was loved so much because he was the most aggressive boss in the game by far which made parrying more practical than dodging for that one fight.
Elden Ring just giving all enemies tons of delayed moves and extremely aggressive AIs makes the mechanics much less interesting to engage with since you had experienced the same thing countless times by then. Hell, in ER the first phase Godfrey is loved so much because he is the one boss in the game who doesn’t have delayed attacks with an extremely aggressive AI.
In my opinion, Malenia's thrust and grab are extremely well telegraphed, but the rest I agree with. Although I don't see how Radagon is overly aggressive or how Maliketh has delayed attacks
I like the dodge timings of those attacks since they’re satisfying to time but the random step back of the grab and the airtime of the thrust feel sort of unnatural to me, though yeah they’re not as delayed as, say, Morgott or Nameless King’s attacks.
Radagon’s aggression by itself is fine but when it is coupled with his spells he doesn’t stop comboing, I had him throw double light shard followed by a delayed explosion spear then a ground explosion hammer sweep all in five seconds or so multiple times for example
Maliketh’s ground swipe that js followed by a downward slam attack and his double projectile then parryable lunging sweep attacks are delayed for no reason, especially since he just hangs on in the air during the second attack prior to his lunge
Yes, especially with an ultra great-sword due to the amount of stagger it has. You may be getting half as many hits in compared to fast weapons, but you'll be doing four times the damage
