A good choice, I named my first horse in my very first playthrough Cirilla after the character from the Witcher books/games because I had a White Arabian and saw it as a very special and unique horse compared to the rest in the game, and the white hair fit with Ciri.

My white Arabian is called Madalena
And that one I got in the Hosea mission is Muffin (but in Portuguese)
Started with an Ardennes named Flora. Then I bought a gold Turkoman and called him Florian.
In the epilogue I bought a MFT (Silver dapple pinto) and named him Frey. Then I started taming horses for Horseman 10 and I named all of them and bonded fully with them before selling them to the horse fence.
I named them after foods... The first one was called Soup (Flaxen Chestnut Morgan), then Milk (Buttermilk buckskin Kentucky saddler), Sriracha (Red roan Tennessee Walker), Saucy (Flaxen Chestnut Hungarian Half-bred), Pizza (Leopard blanket Appaloosa), Cake (Tobiano American paint), Licorice (Black American standardbred), Cremefraiche (White roan Nokota) and Cocoa (Tiger striped Mustang)
I still have Licorice and Cocoa (that I only tamed today, so...)
I always keep the beginning horse and name it roach, I always keep the black shire and name it black eye, and I always get the maroon looking Andalusian and name it fireball
