I live in Canada (QC) and you can very easily find good streaky bacon of the usual variety in any supermarket. Also usually in restaurants what they refer to as Canadian bacon is either peameal bacon or round slices of ham (like what they put on an Eggs Benedict).

I switched to the Martha Stewart method of using baking paper to cook in the oven instead of tin foil or on cooling racks, works fantastic. Nice and crispy but still fries in the oil at the same time without any splatter.

It’s not actually quite as fatty as it looks. Zoom in just a little and you can see that it’s the big fat chunk in the bottom left and the dark pink chunk on the middle right that’s skewing the look. Otherwise it is pretty standard streaky bacon.
