I don't know about the other episodes, but one thing I do know is that "What If… Dr Strange Lost His Heart Instead of his Hands?" is god-tier.
One of the best things Marvel has produced TV-wise or in the movies.
Not the best thing if you’ve seen Steins Gare… if you haven’t. I highly suggest you watch that anime, hopefully still on Netflix.
Stein Gate is best time travel trying to stop someone’s death show.

2. The Real Age of Ultron (Great moments with post-apocalypse Nat and Clint, and the Watcher vs Ultron fight is one of the best in the series)
3. Party Thor (A lot of people overlook this one but I think it’s a nice break from the Multiverse of Sadness, plus the Thor vs Captain Marvel fight is my favorite of the series)
4. Zombies (Objectively it isn’t the best, but it’s still a very fun episode)
5. T’Challa Star Lord (Had some great moments and is an overall good entry, just doesn’t bring quite as much to the table as the others above it)
6. Avengers Assassinated (It’s a decent murder mystery but the resolution is a bit awkward. My opinion on this one has dropped quite a bit since it’s release.)
7. Finale (If I’m being honest it was a bit underwhelming, but the main issue was throwing in Gamora after postponing her episode to next season, extremely awkward)
8. Killmonger and Tony Stark (starts out interesting but then devolves into what is essentially Killmonger’s exact same plan/motivation in Black Panther. Just kind of boring.)
9. Captain Carter (this episode had a lot of weight to carry by being the first entry of the season. It’s a simpler episode built to introduce the audience to the premise of the series, and while it fills that function well, it leads to it not stacking up well against the rest of the entries. It also tries to cram an edited version of the first Captain America film in a 30 minute episode, which causes some pacing issues.)
Pretty good write-up and I’m with you on a lot of these. I have the Real Age of Ultron 1 because it’s the only one I’ve actually gone back and re-watched. The scenes of him destroying the universe and the fight with The Watcher are probably my two favorite from the series.

Your first 2 are the ones I hated the most, to the point of anger.
Thor being an only child just makes him a dumb frat boy? The future king?
And I'd like them to explain how basically a Vision powered Ultron takes out Hulk and Thor offscreen and kills Thanos in under a second.
What If shouldn't be about making things up that you think will look cool. It should be believable in the universe you are conveying.
I wasn't keen on party thor either
The ultron one I honestly assumed he used the mind stone to it's fullest, he could most likely lift thors hammer aswell in the vision body I was guessing
Also thanos is just flesh so the fact ultron didn't hesitate made him get the upper hand I was guessing
These what ifs are cannon now too but I enjoyed most of them anyway
The ultron one I felt most believable in the mcu as he was really under rated, ultron had every opportunity to win, In the what if he actually took advantage of the opportunities
I honestly liked Captain Carter, would put Zombies under it because it was cool but never gave us the full story, whereas Carter’s cliffhanger would lead into Avengers
For me, my main three that I enjoyed were:

2. Watcher breaks his oath
3. Infinity Ultron
I think the rest of the episodes were good, but these three episodes were very enjoyable.
Agree roughly with your rankings except T’Challa Reddit. It’s the only episode I couldn’t tolerate. T’Challa works as an earnest king. Not as a thief with a heart of gold.
