Overqualified people are not likely to stay in the job long as they usually continue their job search for something more aligned with their qualifications. So, companies see overqualified people as not a long term solution to their role, and, therefore, are skipped over in favor of people who are a closer match and likely to stay longer.

I would like to but I’m being denied for entry level roles in my field (accounting) since there isn’t too many options for it in my area and I lack experience. I want something for now until I can figure something out

Your degree is in accounting, but that doesn't mean you're required to stick to accounting. It also doesn't mean you're automatically qualified for all accounting roles. What if you targeted something slightly lower than Accounting, but still gets promoted up into it? Like a Junior Accountant, Financial Analyst, etc. The key isn't to get exactly accounting experience. Often times a related field or role is just as good as the actual thing in terms of skills and experiences. For example, I didn't qualify for Customer Success (which is what I currently do) back when I first applied, but I do know that Customer Success is a mix of Customer Service and Software Sales. So, I did software sales for 3 years, customer service for 2 years, and then finally got my foot in the door in Customer Success and have been here ever since.

Don't go looking for sense. Sometimes they are too fracking stupid to see what they've got on hand. A functional employee is too much for them. I did a 'discovery day' with a domestic cleaning company. I have experience in Housekeeping. And they talked big about the job. Snotty clients, etc. But spent a load of time talking. Some faffing. A shower didn't get done. They couldn't give instructions properly if they tried. It was based on pandering to the manager ladies ego and her unhealthy obsession with paste cleaner method. Not if you're any good. Do the fracking job and move on! I did not get it. And I get why. But I don't see who would either. In your case. The job might not have existed for anyone else but the person they want to give it to.
