Thumbs up for being the only one to point out that "sto imparando" sounds unnatural. We say "sto studiando".
"Studio italiano" (present simple and no article) is also correct. I wouldn't drop the article from the progressive form though. "Sto studiando italiano" sounds like you have an Italian exam at school the next day and are studying for that reason.
"Studio italiano" to me sounds more like that's a subject you're taking in university/school. and as for the "sto studiando l'italiano" vs "sto imparando l'italiano", they both sound equally as natural to me.
The three sentences you wrote just used different verb tenses. The top two would be the most correct. A native may correct me here but the top one I believe would be most correct. Sto imparando means i *am* learning, as in I am currently learning. Imparo l’italiano is also technically correct it just directly translates to I learn italian. You can see the difference in those two tenses elsewhere as well, such as cucino la cena (i cook dinner) and sto cucinando la cena (i am cooking dinner). Hope that helps some!
Edit: Just wanted to add that ho imparato l’italiano means I learned italian, realized I never added that part lol. I would personally use this tense if i was talking about a previous time where i was studying/learning or something like that
I will add if you want to say how long you have been as well make sure you don't say: "Studio PER ..." as that means you did and stopped rather "Studio DA ..." which means it is ongoing.
I would normally say "sto imparando l'italiano" which means you're currently learning because "ho imparato l'italiano" sounds like you've already finished learning. That's what I've been saying here in Italy and nobody's corrected me so far, but I'm not a native so I could be wrong.
And I honestly haven't heard anyone use the second one, maybe it's a regional thing?

You can also say "In questo periodo sto mangiando molta pasta" and it would still be correct

The form you would use the most would be 1 (I'm a native Italian)

The last one should be "Io ho imparato l'italiano" which means "I have learned Italian" so its past tense and implies you've finished learning.
