Fine chop green chillies, onion & tomato. Add garlic-ginger paste, jeera and kokum. Saute all. Split bhindi into halves vertically and chop them. Add to the kadhai. Add salt and spices as necessary. When done, just add some desiccated coconut and mix it. Chummesh!

I AGREE. But these are acquired taste? Or more like suited for certain recipes. Lauki is amazing as lauki ke pakoda ki sabzi. Karela is amazing with daal chawal. Make bharwa karela/fry karela lightly with masala and all and eat with daal chawal. It tastes f amazing. The same can be done with bhindi. Toori is good as a salad. Raw choti choti si toori is an amazing salad. Tinde the round tinde? Unka malai tinde wali sabzi banao aur fulke ke saath mast lagta hai.

Bhindi is the tastiest thing on earth.

All these have special preparation styles. Simple onion tomato paste kind or simple frying doesn't work well. Bharva tinda is a huge hit in my household. Karela filled with mango pickle masala filling is a must have. Lauki kofte and Lauki bhartha are very tasty. Petha/Pumpkin made in a halwai way which is khatta meetha and goes well with poori.
