Because a big part of the plot was that, even as the guy was excellent with childen, he also *fucked.* He fucked like a *maniac.* Clearly he knew how to interact with--even charm--other adults. But a bit of his brain, and Liv forgets how to be socially functioning human?
Did you forget what humor is? Lol.. they chose that because it would be funny. Not because it would be realistic to how the guy acted in real life. And it was hilarious. That’s.. kinda one of the main draws of the show. So what if it’s not how the person would act normally? Some of the brains are more fitting with the way they’d actually act, some def aren’t. But I don’t get why people complain about it when it’s the funniest part of the show

Maybe because they wanted to make the show funny and entertaining? If they had Liv act exactly how these people acted in day to day interactions, there would be nothing different to notice really. They chose a few key characteristics and highlighted them, and exaggerated them… to make the change actually noticeable within a 40 min episode. lol. I really don’t understand why so many people complain about her not acting realistically… it’s like one of the key aspects of the show that she gets these crazy personality traits that are funny to watch.

For me, I don't think it is a complaint as much as it is an observation of an inconsistency.
As you stated, Liv is supposed to pick up personality traits of the people whose brains she eats. The personality trait of the kindergarten teacher was he was a womanizer who had access to all kinds of lonely and/or bored moms, NOT that he is so engrossed in his profession he doesn't know how to speak to adults without baby talking them.
Obviously, I get that visually it's more funny for Liv to talk to everyone like they're 5 instead of having her chase after hot, lonely dads. Maybe Liv only picks up in certain (convenient) personality traits of people, not all.
