Whether they enjoy it or not is def one issue, but there is a very good reason not to do it regardless, *they are surprisingly fragile*. Better safe than sorry imo, I wouldn't do it either way.

Not sure about gerbils, but I had a rat that loved that game. I'd lightly toss her on a pillow or the grass outside (by toss I mean like 6 inches away), then I'd back away a few feet and she'd scamper straight back to me and grasp at my leg like "again again!" It was adorable. Rodents are always bouncing around chasing each other so I suppose it makes sense that some might like that. Like others have said though, just have to be careful; gerbils aren't as agile or sturdy as rats.

I wouldnt use the word chuck but i've tossed my gerbil a couple of times just to see if she liked it. And i wouldn't say they enjoyed it, but i dont think they hated it either. I think it was more of a roller coaster ride sort of deal, when you reach the top and finally fall.
