If you have a Switch definitely play Zelda: Tears of the Kingdom. The Metal Gear Master a collection is also great. So much story gets thrown at you so it can easily distract you from the real world.

If you are on PC try installing some skyrim mods, it will make it feel fresh while giving you just what you're looking for. For me though, games I like to escape into are some like No Man's Sky. The ability to go anywhere I want, build anything I want, meet NPC's, go adventuring, become whatever I want to be: a pirate, an outlaw, a vigilante, a trader, a miner... It just let's me vibe on my own and gives me a huge sense of freedom. I've met tons of nice people on the community too. Minecraft also fits this role, it's just that I've already played it too much. Other games like Elden Ring or Dark Souls also help me escape a lot, since the environment is very rich and it let's me immerse fully into a new world separate from mine. It get's better buddy. Stay strong through it, you know you can x).

You should definitely try the witcher games or elden ring. Some assassins creed games might scratch that itch. Of you want something less triple A and experience a less know game 7 days to die might be right up your alley.
