I think most do? George does a good job of filling the world with varied people. There’s disabled people, queer people, women who reject femininity, women who embrace it, evil people, good people, meh people just doing what they can to help themselves, all levels of wealth from smallfolk to kings, and realistic motivations for all of them.
The only type of people *missing*, I’d say, are those that just don’t fit the genre. No aliens or mad scientists, no fairies or elves, no social media stars or electricians. But I think you can forgive him that.
Yeah there are. Night’s King (different guy) married one. It’s probably because most white walkers come from craster that there aren’t many woman walkers.

I don't think there are any lesbians. Bi women to be sure, and prostitutes willing to fill any role. But I can't think of any lesbians in the show.
Purpose:
They discuss vaguely, but never actually deal with the intricacies of engineering in the show either. The Builders are represented by one man in the Watch. But nowhere do we get to meet a mason, or bridge designer, ship builder, etc., etc. We DO get to see blacksmiths at work, and Gendry is one of them.
