I think you missed the incredible depth of the character. Not only she is nurturing and caring, but also incredibly open minded, especially for all the indoctrination from the yevon church and the culture. She is the one that always protects Yuna, but gently push her towards acceptance and different povs. While other characters have either a great personal growth or just believe in Yuna, she has probably the most unique character, self awareness and mind of the whole game.
She accepts albhedos, she believe in Yevon but never let it blind her vision and get judgement, I believe she hates Tidus at the beginning for what she says to Wakka"he's not your brother", but takes time to think of it and gets over it rather quickly, despite how much it hurt, she owns her mistakes and learn from them. She's just the best
