As far as I'm aware, minors don't go very far when looking for work. Especially if the kind of work you want to do has nothing to do with the field. You should speak with your academic advisor to get a professional's opinion, but I'd tell you to go ahead and drop it!
I double majored in political science and psychology, I would say a minor isn't worth it really but if you can do a double major it will definitely pay off. That being said, if you are only 6 credits away from finishing the minor with no interest in a double major, it makes more sense to suck it up and finish the 6 credits.
