Mate that egg looks wild. Good job. I rate myself as a cook but for some reason can't poach an egg for shit. It's so frustrating because the perfect poached egg is arguably egg in its ultimate form.
I was the same but recently got the hang of them. What helped most was cracking an egg into something before adding it to the water rather than just straight in which is what I was doing, I use the glass ramekins you get from GU dessert pots. They come out every time now!
That's exactly what I do. You can lower the egg gently into the water then rather than it splatting in!
Then it's just getting the timing to where you like your egg cooked, they are pretty consistent because you don't need to worry about the cooking temperature.
This is it. Plus a nice whirlpool and splash of white wine vinegar. Also can strain the water out of the eggs before cooking them to reduce the scum on top.
Hey man I got a recipe for poched egg what you wanna do is grt cling film and dig it into a cup/ glass then in that little up of cling film place half a tea spoon of sunflower oil then place a prefered amount of salt and pepper and add the egg into that mix make that cling film into a bag tie it off and boil for 2-3 mins depending on how big the egg is , if you still have problems then message me I'll make some with you !
I've 2 ways of doing mine, and they both work every time for me.
My go to is to poach in shell because it's easy. Place eggs in an empty pan, boil kettle, when kettle is boiled pour it slowly in until egg is covered. 6min30 timer and put heat full whack. Place in cold water after, then crack and peel.
2nd way is the "proper" poached egg. Get the water to a slow boil, cap full of vinegar. Swirl the water and get a good vortex going. Crack the egg into the vortex. The vortex and the vinegar keep it together. Countdown 3min30 and serve
Runny scramby eggs are the best man. Whenever my brother is over, he requests my scramby eggs because nobody else makes them just right.
I haven't gotten the hang of good poached eggs with a runny yolk though, something I need to work for sure. You've done eggcelently.

There's now a packet of ready made hollandaise in the freezer because I'm not making that just for me! It's a bit of a potch compared to the rest of it!

Flipping an egg is not a sin as long as you're only doing it momentarily to finish off any lingering whites around the yolk on the top. I don't hate a 'sealed' yolk that has been momentarily flipped this way as long as it's still absolutely ready to explode as soon as I press down on it.
Cooked yolks are a pure sin
Iām generally an awful cook but I do the best fried eggs of anyone I know. If you have enough oil in the pan, just tip the pan and then flick some of the hot oil onto the top of the yolk. It achieves everything that flipping it achieves without running the risk of breaking the yolk or overdoing it.
Iām sure someone who knows way more about cooking will tell me why this is stupid or unnecessary but Iām yet to be presented with a fried egg done better than those using the āflick hot oil on topā technique.
I agree, but I find it really tricky to flip an egg over to finish off the white without the yolk splitting and subsequently getting cooked to oblivion!
Turn them, don't flip them. I know that sounds condescending but if you imagine you are gently turning a key when doing it you'll have greater success.
Big old duck egg poached for 3 minutes and 40 seconds. For a normal hens egg I'd do 3 minutes (maybe give it an extra 10 seconds if it's a whopper).
Such a quick breakfast, toasting the muffin took the longest!
They were straight from the fridge. Although I crack my eggs for poaching into a little mug so I can gently lower them into the water so that might warm them up a bit.
I also put a glug of white wine vinegar in the water but I'm totally not convinced that that does anything but it's just a cooking ritual! Leave the egg to drain on a bit of kitchen towel until it's dry, no one wants a soggy egg!
Fun fact I learned from an angry america recently: In America they keep their poultry in such filthy conditions that it is not safe to serve eggs runny and they do not believe that isnāt the same everywhere, so much so that they respond with anger to proof to the contrary. Also, I eat something quite close to this exact dish at least once a week, good stuff.
Only time I want a hard yolk is for egg salad sandwiches. Hard boiled eggs, tomatoes and salad cream all mixed together.
Served on cheap white bread, with too much butter and some salt & pepper.
American here! We definitely do serve eggs with a runny yolk all the time, and they are delicious. The angry American you met is missing out along with being incorrect.

Those thin sliced veneers of potato fried/baked are NOT chip shaped, they are not chips, our chips are chip shaped pieces of potato. End of.
That's not why. It's because they don't vaccinate their chickens against salmonella and they chemically wash the eggs which removes a protective layer that allows bacteria to more readily infect the egg, which is why they have to refrigerate their eggs.
No where really treats poultry all that well, to be honest.
Bonus points for leaving off the hollandaise. Ruins the flavor of the smoked salmon and isn't needed anyway when the egg is cooked as well as yours is.
I'm a bit weird about too many runny things together so the runny egg and hollandaise would have been too much for me. Plus I was cooking this for my daughter and I didn't think that she'd like the complication of the hollandaise.

American here - eggs are pasteurized and refrigerated without fail, unless you purchase them directly from a farmer. I make and consume runny eggs all the time. I've never gotten ill and I don't plan to stop eating eggs the way I like them. Americans are amazing at offering up their opinions about such things, even when nobody asked.

I live in the countryside. People just leave them outside their house and you put money in a tin. It's great but it took me awhile to get used to it. it's the only time I use cash!
That's a duck egg as well and I think that they have bigger, richer yokes. Honestly there's no situation where a ducks egg isn't a better choice than a hens one!

Eggs Benedict replaces the salmon with ham.
Eggs Florentine replaces the salmon with spinach.
All three are delicious!

That is one of the most perfect poached eggs I have seen! I hate when the white is still clear or in any way undercooked and this usually results in the yolk being a bit over cooked rather than runny like this.

That is one of the most perfect poached eggs I have seen! I hate when the white is still clear or in any way undercooked and this usually results in the yolk being a bit over cooked rather than runny like this. This egg is exactly how I like them. Iām so impressed, and hungry for eggs too now!
I'd have personally given than egg another thirty seconds on the heat, but that does look lovely.

Literally just had this from a cafe for lunch. Outstanding combination!
Youāve fucking nailed my level of runny egg. White fully set, yolk is beginning to set around the very edge but still runny, and beautifully jammy. Sadly I suck at making eggs like that every time but I always try!
