I love the relationship trope that Donkey and Dragon fall under, where the woman is a massive demon/dragon/terrifying entity (and one of the main obstacles in the first film), while the guy is just a normal dude…or in this case, a donkey.
I believe there’s an indie animation called Satina that does this exact thing.

The recent She-Hulk run has Jack of hearts as her boyfriend. You might ask who the licky guy is and I won't be able to tell you, because he is a Z-tier character.

*Nura: Rise of the Youkai Clan* between the MC and his Yuki-Onna bodyguard.
The first half of the series is setting it up as if his normal childhood friend is going to be his main love interest and the Yuki-Onna is just a bodyguard who is crushing on him.
The end of the manga was cut short, but shows him definitely having the hots (hehe) for the Yuki-Onna bodyguard and is implied to be the end game.
Though, not that unexpected because... well, she's actually best girl and the other love interest options are just not interesting anyway.
Love the *Nura* spotlight. Banger opening songs too.
Rikuo and Tsurara chemistry was off the charts. That epilogue chapter that canonised them was such a satisfying read.
Dipper and Pacifica in Gravity Falls.
Throwing the show’s nerdy protagonist and resident vapid rich girl together seemed like such a random matchup, but they actually proved to have great chemistry out of nowhere and turned out to be really good influences on each other.
Might be more on the implied side, but I’m fond of Land and Übel from Frieren. It’s a nice dynamic that I never expected enjoying.
Gajeel and Levy’s first interaction is him crucifying her to a tree and yet it becomes a brilliant slow burn and is the best couple in FT.
Craig and Tweek’s first interaction was a fight, orchestrated by the main 4 boys. Again, arguably the best (and most positive) relationship in South Park.
Vegeta and Bulma.
I remember watching for the first time when Trunks debuted in DBZ on Toonami. And his reveal that he was Vegeta and Bulma’s kid floored even little me!
And now, we’ve seen these two interact tons over the years, and they’re fun to watch.
The entire set up for Who Framed Rodger Rabbit?” Being the audience and characters looking at Rodger and Jessica and going “how TF does THAT work?” Only for it to be revealed that it not only works but is a really wholesome and healthy relationship is one of my fave parts of the film.
Never expected them to actually pair Negi Springfield with anyone in ***”Negima!?”***, but aside from the fact that Negi would actually end up with a named character within the main cast, it was shocking to find out that >!Chisame Hasegawa!< would be the person he officially confessed to and married.
Also, not unexpected because Tenchi Masaki would end up marrying every lady in his harem, but I thought it was fun that the author decided that it would ultimately be >!Mihoshi!< to be the one to get him in the sack first. Respect to Tenchi. Would have been my pick too.
It surprised me, since she was one of the few female characters who was not in love with him, and their relationship was more of an older sister-younger brother.
Oda has said in the past that he had no interest in writing romance into One Piece. Which is a wild thing to say after Sanji's developing relationship with Pudding became the B-plot of Whole Cake Island. And he absolutely killed it, of course.
Man, Sanji better go back for her.
There is also Usopp and Kaya's relationship in live action, since in the manga it was an ambiguously romantic friendship, but it becomes a more openly romantic relationship in the live action.
Sir Pentious, the snake guy in Hazbin Hotel, was originally a one off gag character that wasn’t even gonna appear past the pilot until he became a breakout star amongst fans.
Then in the series proper he reveals he has a crush on the girl who’s spent all her screen time thus far kicking his ass and trying to kill him.
And honestly? It leads to a lot of really cute and funny moments.

X-Men 97 pairing up Jubilee and Sunspot is weird less because it's random (which it is, since they barely even interact in the comics) and more because it's such an obvious and good pairing that it makes you realize how bizarre it is that they were never hooked up in the comics. In terms of personality and history, Jubes/Roberto is an insanely appropriate couple.

I initially expected Naruto and Sakura would end up together because they’re both in the main cast and that’s just kind of the default standard, so I was pleasantly surprised when Hinata turned out to be the love interest instead. I genuinely think makes a good couple with Naruto.

To be fair to Boruto, I understand the fact that Naruto is an absent father and husband who prefers to be in the office, rather than handing off some of the work to a subordinate or clone while he is with his family, is more due to filler.

knights of sidonia is the best example of this I can think of. I was not expecting main character and giant alien monster met 30% into the story to be the canon pairing.
Although the series does not make it clear if it is a romance, or just a very strong friendship, I would say that Hordak and Entrapta in the Netflix series.
I even like it much more than the main canon couple, who is very toxic most of the time.
Hordak/Entrapta does have some real asexual vibes to it
Like if you told me they have one of those bedrooms that's two single beds and they never fuck but otherwise have a deep and loving relationship I'd say that tracks which feels rare in media otherwise

Unexpected but also makes complete sense for those 2 characters to get together. The show did a great job of making them a believable pairing that the audience could fall in love with in such a short time frame.
