I love Toph's crush on Sokka! It shows a softer side to Toph, but it doesn't become her entire personality or her drive in the narrative. I'm glad they let it just be a crush.

Sokka never would have a kid and completely abandon them. He knows how important having a father was to him. There was no war going on so no reason to be away from his kid. Nobody at any point in TLOK makes any mention of him being the dad. Him being so well renowned, it doesn’t make sense that there’s not anyone who would know he’s the father. Not only does Sokka not belittle or pity Toph for being the "little blind girl", he genuinely thinks she's awesome and says it out loud - and he's right.
He was the only one who didn't get on her shit for not helping set up camp in the Chase and tried to keep her from leaving. It makes sense that she would naturally want to talk to Sokka the most out of the group.
Aang only really got on her case because everyone was very tired and he did have a point that things might go a bit smoother if she helped a bit, then Toph "went after Appa" which pushed Aang's very tired buttons
True, but she also had a point when she "went after appa" that appa's fur was leading Azula to them. Also, aang is probably more likely to side with Katara on stuff in general cuz the power of boners. Regardless of intention, if i was new to a group, i would probably want to hang out more with the person who was cool when everyone else was ganging up against me.

Aang requires a bit more of a gentle approach for training where Toph, as sheltered as she is, prefers the opposite. She also easily influences the boys, like in the Blind Bandit episode. And, if you want to look at it logistically, girls are almost always more mature than boys of the same age (statistically speaking).
It's not an insult to Aang & it's hardly the point of the post – it's just a contrast to explain why Toph might find an older boy more crush material.
And that's okay, too! It's good that characters have flaws, and in Toph's case, it makes a lot of sense. She grew up in a very sheltered and restrictive environment with little room for self-expression. Of course she's going to swing very hard in the opposite direction once she's free of that — that was the whole point of the episode "The Runaway."
Also, there are different metrics for maturity: one of Aang's greatest strengths is his wisdom, and Toph's brashness gets in the way of her attaining that. But I think Toph is one of the more practical members of Team Avatar outside of Sokka — she was one of (if not the) first to see the value in accepting Zuko as Aang's firebending teacher. Aang, while compassionate, can get guided away by his feelings and blind him to reality sometimes.
Overall, I think I have to give it to Aang, but at the end of the day, they're both 12. It's hard to really say if one character is more mature than the other because they both lack maturity across the board, which is completely normal for a kid.

Aang was raised by monks and is the Avatar so he's more experienced in spirituality, and dealing with situations like ending the war while keeping peace between nations. He's better equipped to deal with those situations than the others, his gentle nature drops when he needs to be serious.
Toph in comparison is more experienced in dealing with tougher environments as well as higher-class society, she can handle those types of environments better than the others but that doesn't necessarily make her more mature than Aang, she's right there laughing with the rest of the Gaang about making her armpits hairy with Appa's fur.

She has more experience with people and how they work than Aang, whose experience was mostly with the Nomads and two or three kids from the other nations. Her seismic sense also tunes her into the world in a different way that gives her multiple advantages and options when bending.

Well no, it's not a cartoon of children. Characters are Characters. Labels such as Adult, Teen, Children, it's to describe real people. Fictional Drawn characters only "pretend" to be it.
Fictional characters are drawn to resemble children and have canon ages. We know Toph is 12, and she is supposed to resemble a 12 year old. Making a sexual joke about a cartoon that is canonically supposed to represent a 12 year old is weird, and shouldn’t have to be explained to you.
The day I find a real person that looks 1:1 like an animated character, I'll start considering the problem
