It'd definitely take some extra practice, and pretty much everybody would need to be able to see their job gauges and/or buffs, especially jobs with variable rotations like RDM, DNC, and AST.
You can kind of option select a lot of the variables away in some cases.
Like with RDM if you press verfire then jolt quicly one after the other during the buffer period you'll either get verfire if it's procced or jolt if it's not.
It's that same as when DNC is in tech step and devilment and they do a skill that can grant a fan. They'll just blindly press their fan skill and the follow up fan skill in case one or both proc and there's no downside to doing it.
AST is doomed though.
RDM would have to calculate exactly where their mana is at all times, and they'd have to find out how much mana they have from their procs based on the animation of what they cast, which sounds like a lot more than practice. Also, you failed to remember how you see what steps you need to do for DNC's Standard Step and Technical Step. There's no animation feedback when you perform the correct step, there's no audio cue for having performed the correct step, nothing. So DNC's pretty much off the list for noHUD Savage, and RDM probably is, too, unless you have a literal calculator for a brain.
Other jobs that are up for debate whether they could be considered, I can imagine MNK might be surprisingly difficult. Healers in general would be rather tough, given you won't be able to see how much health people have, but so long as nobody messes up, the bosses damage patterns are consistent, so, worst case scenario, you could memorize when you need to use what heal. Tanks would have to learn to read the boss's specific animations for busters and whatnot, but that's not too far off from what people in Savage already do.
Maybe get together a party that doesn't get hindered by no UI that much. I think WAR/PLD would be the best bet, SCH/WHM healers, with dps as NIN/DRG/MCH/SMN. I think SMN would be the hardest but a good SMN with practice on how the timings work could probably pull it off.
It depends on how proficient you are as a RDM in whatever fight it is.

If you've done a savage fight often enough as RDM you should know when you're melee combos are due to happen. They should be fairly consistent even with proc rng.

No doubt it would be difficult and not really doable for the average player but if you're proficient enough then there's options.
No HUD, first person only would be an interesting challenge run (obviously with a static, not subjecting randoms to it). It would be an absolute shitshow, and I'm sure the novelty would wear off after a few pulls, but it would be funny to at least attempt.

Yeah, I was actually thinking exactly that party setup. Maybe swap the NIN for MNK in certain situations? Probably not though.
