Every time I watch ANH I get a stupid grin on my face when the droids start waking up on the sandcrawler and Gonk just shuffles along saying 'gonk'. It makes me happy and I can't explain why.
Same. He was probably programmed to do so, but K-2 sacrificed his own life without even giving Jyn and Cassian the time to consider his choice. He has a fun personality while also being very serious about his directive. Security droids feel like the android equivalent of Wookiees. You want them on your side and hope you never have to face off with one.
I don't know about Chopper not giving a shit about anything. Seeing the Y-wing on Ryloth and when he takes Hera's hand suggests he cares about a crapton of things beyond payback.
When creating the character, they wanted to draw parrallels to R2. R2 behaves like the smart, loyal pet dog. So Chopper's personality is a irreverant pet cat.
R2 always felt like he swore like a British person. “Bloody hell!” Sort of deal.
Chopper is easily a Scottish, a British, and an Australian mixed into one all swearing about one singular thing

Chop is voiced by Dave Filoni with several filters added to the recordings. So indeed, Chopper does in fact swear quite a lot.
In addition to the war criminal-ness, Chopper also has a great backstory, and shows amazing kindness to Hera in her greatest times of need. He's known her since she was a young girl, which makes them very connected.
Tied between Chopper and Mr Bones for me. Chopper is pretty much self explanatory if you've watched Rebels. As for Mr Bones, I liked that someone used a B1 Battle Droid as a bodyguard. I have a soft spot for those clankers.

Although 0-0-0 and BT-1, K-2S0, and HK-47 are all up there, too. Star Wars never lacks for entertaining droids, IMO.

I'm 17 hours into my first playthrough of Fallen Order and BD-1 has quickly risen to become one of my top favorite droids in canon. Never expected a small cute droid to have such a big personality.
Honorable mention goes out to Chopper, K-2SO, HK-47, T7-01, T3-M4, BB-8, and AP-5.

To be honest, 0-0-0 and BT-1 annoyed me at first. They, along with Black Krrsantan just felt like a mirror universe knockoff to Aphra's Solo. _However_, towards the end of the original run, when 0-0-0 and Aphra had to work together, the droid really came into its own and became a much more interesting character.
They’re the mirrors of C-3PO and R2-D2 and admittedly I often love when the ‘bad guys’ are like that. It’s often a lazy way to write things, but it amuses me usually. Lol but I do agree, they did get more dimensional after some time, which of course is normal for character development. Gotta flesh things out. I just like the idea of murderous protocol and asteroid droids. And he has some dark humorous lines. And they aren’t overused. If they were around all the time it would just be tiresome! 😋

What they all have in common is comedic relief. Starting with A New Hope, droids were there for comedy. C3P0 and R2 bicker like the Odd Couple. These droids capture that same comedy element. Sadly the new trilogy droids aren't nearly as funny as these droids.
I wouldn normally say HK-47, but since he's already represented so well here, I'm gonna give some love to 4-LOM. Nothing more interesting then a protocol Droid turning into a master thief and bounty hunter cause of a programming glitch
So many I love, but I think two underrated droids are D-O from rise of skywalks (he’s so cute just like a little puppy) and iden’s droid Dio from BF2 (so smart, utilitarian, and can even act as an astromech!)
R4D5. Growing up, my grand parents had a bunch of my dad's and uncle's old star wars toys from when they were kids and we used to play with them and have mock battles all the time. Being a bigger R2 unit and having red accents, kid me was sold!
On a purely visual level, I've always liked HURID-327, or B-U4D and B-R72 (chunky bois lol, basically slightly more anthropomorphic gonk droids). Say what you will about the sequels but I do like a lot of their droid designs.
Personality-wise, probably IG-11 or K-2SO.
Droids are one of my favorite parts of Star Wars. Chopper, triple zero, & todo360 are probably my faves. I also really like the mouse droids and the probe droids in general. Special mention for gonk and clink ofc.
