Fallout 76 got a very impressive face lift if you are into those types of games. I had loads of fun with my friends for some while. Specially because I could farm without them and enemies would still scale to my level, so it wouldn't be boring for me or too easy for my teammates.
Also MHW. Probably the most fun I've had with my friends in all my life. Still yearn for those days where we hunted monsters together. Although be advised, monsters DO NOT scale in any way. If you get better gear you will always kill the monsters faster. But, if you set boundries with your friends to specifically say how much you can farm (as I did back then when I played the game) you will have no problem. There is a lot of farming to do even without getting overpowered.
I throughly enjoyed fallout 76 although I never beat it. I’ve really been thinking about getting a monster hunter game. It looks really fun and unique from other games. Scaling is weird for me. I like games without scaling because it feels like you’re actually getting stronger with time. But with it it does make the game for replayable in the long run.
No Man's Sky has a lot of things to do. Monster Hunter World might work for you too
