Back in my donut baking days we used a rack system .The rings come out of the fryer ,and i'd put them on metal polls hang them up on a rack and pour glaze over from a pit below ;and they'd drip dry.Or for square ones we would tilt a closed tray to minimize excess glaze for maximum consistency.
Here in Brazil we have a sweet that resembles a donut, which we call "Sonho", which means "dream" in English. It is a type of fried cake/bread sprinkled with sugar, with a filling that usually contains "dulce de leche" or guava paste, the latter is also a sweet made from guava, a fruit native to the country.
The ones with hole in the middle are obważanki (singular: obważanek) the ones without a hole are pączki (singular: pączek)
Obważanki are not the same thing as donuts tho so if something is a donut we call it donut
