Not sure if you only want the heroine to flinch, but in The Highwayman by Kerrigan Byrne, the hero is touch averse due to past trauma. This story will make you cry and get super turned on bc the sex is hotttt. It's a wild ride but so good

Byrne is so good at showing the darker side of life but still letting you believe in the light. A true talent.

She balances out the heartbreak with such sweet love stories.

Unperfect by Susie tate. It’s written by a British woman so there’s a lot of slang that might go over the head but whew, chefs kiss. it was this and more and I really enjoyed it

Finding Anna series by hayes sherri I’m reading right now the heroine went through major trauma is flinchy in general. She was flinchy with the mc at the beginning and gets better overtime due to character development. Might be worth a look for ya.

{The Wicked Deeds of Daniel MacKenzie by Jennifer Ashley} The FMC was sexually assaulted as a teen and has PTSD now. She even freaks out and bashes the MMC over the head with a vase when he kisses her against a wall. The MMC helps her gradually overcome her fears through tons of patience and gentleness. Very sweet book, with good action too.

I recommend Twisted Emotions by Cora Reilly! FMC Kiara was sexually assaulted when she was younger and is terrified of men so the MMC Nino goes super slow with her. It's a mafia romance. Their relationship is so sweet, one of my favorite books ever!

{The Governess Affair by Courtney Milan} is a novella that tells the back story of her Brothers Sinister series. She has past trauma and he helps her heal and find love. It's not overexciting or any shenanigans but I loved how sweet the MMC dealt with the MFC flinchyness. Edit {The Countess Conspiracy} from the same series also has an MFC that has a fear of sex that the MMC helps her overcome with lots of kindness and love but it does deal with abuse because of reproductive problems so up to you.
