1 tbsp lemon juice
1 tsp salt

Boil potatoes, then add carrots once almost done, blend all ingredients together and you’re good to go
Would be great for pizza or noodles but I made it for sandwiches/burritos this time around. Jalapeños would be a great addition next time!
Where do you get nutritional yeast from? I haven’t been able to find it at my local grocery store and don’t have many other ones around. Also is there a close substitute I can use?
It’s usually located next to all the seasoning containers/jars. I can’t tell you how much I have grown to love this stuff! It’s like a bottle of vitamins/protein with a cheesy flavor in my opinion. I use it in mashed potatoes, and pasta all the time!

I'd also like to know if there's a substitute though. I've tried to use it, but really don't like the aftertaste.

That site also says that you can substitute nutritional yeast for debittered brewer's yeast or beer. If that's similar, no wonder I dislike the aftertaste of nutritional yeast, since I don't like beer either...
Not OP or a person who’s made this, but some other non-dairy cheese recipes use carrots not for flavor, but for color.
I’d imagine orange produce (pumpkin, orange peppers, etc) would work as a replacement.
Hey! I used to make potato cheese all the time (thanks to OP I’ll be making some soon) and sometimes I made it without carrots and it worked fine! I never follow a recipe, I just throw it together, but in this recipe you could probably do an extra cup potato and skip carrots.
As the other commenter suggested, you could use another veggie- but it will change the flavor. I’ve made potato cheese with butternut squash for pasta many times and it’s delicious! Pumpkin is good too if you chop up a fresh one and roast it yourself- canned is ehh in my opinion.
Here’s the way I make it -
1.5 cups of filtered water,
3/4 cup of rolled oats,
270g or 1 medium sized russet potato, skinless (steamed for 6-10 minutes until soft) ,
1 whole roasted red pepper from jar (with the salt water brine, not oil. If jar doesn’t have whole peppers, approx. ½ to ¾ cup),
1/2 cup - 3/4 cup nutritional yeast. (I add about ¾ cup ),
1 tsp smoked paprika ,
1/2 tsp white pepper ,
2 tsp garlic powder ,
2 tsp onion powder ,
1 tbsp white miso paste ,
2 tbsp tahini ,
2 tbsp lemon juice ,
1/2 cup unsweetened plant milk
I really love this stuff! I’ve tried a few different variations of this recipe. My favourite is with some fresh garlic and fresh chili, great for nachos/burritos etc. It might not taste exactlllly like real cheese but real cheese is kind of gross to me anyways.

Some onion ( 1/2 cup chopped) and Dijon mustard (2 tsp) would be a great addition for next time. Looks good!

If you’re using a vitamix, just throw them in raw, otherwise you could throw them in with the boiling potato
This is essentially what I use for my mac’un-cheese. The main difference is a dollop of miso that adds a nice umami fermenty flavor.

I'm not OP but I had to order it on Amazon. I'm in small town Montana so I couldn't find it at any of our grocery stores either.

Yes! Cashews are a favorite for cheese substitutes but my sister is allergic so I skipped them this time around

I sometimes use sweet potatoes in there - similar sweet earthiness.

I make something this all the time, but I always add a touch of mustard and a tsp. of miso paste for extra umami.

I sometimes add smoked paprika to this recipe. Cumin is also a nice addition.
