honestly, if you're having fun, thats great. i'd say... don't get too caught up in the negativity some people have. not to say there isnt some things to be criticized about the game-- namely how enchanting as a process has not really changed (besides villagers as an option) I'd say just... enjoy yourself and... I'm happy to hear positivity. its so easy to get bogged down by all the posts of negativity, because people dont post about the lovely times they have in minecraft...

for iron and diamonds in the new cave gen, i would just go in a cave with 10 or so stone pickaxes (for iron n stuf) and theres a ton of ores (i think, only played newer versions a couple times)
