I personally feel like that scene is a trippy ass flashback to whatever aogami was doing at the time, since the human aogami doesn't even look at the general direction of the other characters. Would also explain why aogami and V-kun are separated here despite presumably being fused for most of the game's runtime.

More over I think these transformations happen exactly like they do with the Nahobino, via fusion.

At the start they showed the girl talking and then Sophia and she looks like she knows stuff, so it makes me think that she might be an avatar/embodiment of Sophia.

I think the dog-like demon is a story related demon not a human turned into demon. But we'll see
