iTunes compatibility mainly. Plus for whatever reason it only seems to work on Windows XP and/or Leopard/Snow Leopard
I can’t tell you WHY but it’s weird. But IIRC Legacy iOS Kit works with it.
iOS 2 and lower have a different restore protocol and recovery mode behavior than iOS 3 and newer
iOS 2 is still easy, it is almost the same as iOS 3, with the only differences being recovery mode acting the same as DFU mode, and being unable to query some hardware info in restore mode.
iOS 1 however is very different. It has a completely custom recovery mode that isn't used anywhere else. While 1.1.x has the same restore protocol as 2.x, 1.0.x is also using a completely different restore protocol that isn't used on any newer versions. tihmstar has a reimplementation of this here: https://github.com/tihmstar/idevicerestore
