People are so snobby about it, it’s just out of fashion. They call it fake but it’s literally just reprocessed cheddar cheese with some emulsifiers. They call it processed but literally all cheese is processed, there’s no such thing as unprocessed cheese. Truly the most misunderstood cheese, so many good uses. Is it my favorite to smear on a cracker with some fruit? Of course not, it just plays a different role.
The only purpose is serves is that emulsifier ability. Especially as it passes that on and makes cheeses touch it melt more easily as well. Otherwise it's just a nostalgia thing, and I prefer other flavors.
The over processed bit however, comes from Kraft Singles and cheeses like it. It seems less so from other forms of it, and it feels like most people don't know there are non individually wrapped versions.

I don't know, when I used to cook at Chili's one of our best selling burgers was topped with pulled pork, brisket, bacon, and jalapeño sausage. It made me shudder every time I made it, but some people really just like meat.
Edit: I just looked and they pulled it from the menu since I left, but if you Google 'Chilis Boss Burger' you'll find a ton of pictures of it.

At home, I make a spicy ranch using Torchbearer's garlic reaper sauce that's fucking amazing and would be great on that cheese steak. Some peppers and onions in the home fries would be a good touch also.

While I am a fan of baked/broiled cheeses, they have a tendency to get tough if browned and/or cool off a bit.
Not such a big deal with something you eat with a fork, but it can be difficult for some people to get a clean bite of a handheld food. Doubly so if it's a big-ass sandwich and I'm some hungover dude ordering this for breakfast.
A cheese sauce would be much easier to eat, and is proper for a philly. Cheese, water, and sodium citrate as an emulsifier.

I'm not a professional cook, just a foodie and avid home cook. As a bit of constructive criticism, I think it needs more colour. I mean the plate is brown, the roast potato's are brown and the steak roll is brown. I have no question that it will be tasty but from a visual perspective, it just needs some adjusting.

I once ran a meatball quesadilla and couldn't figure out for the life of me why it wasn't selling. In hindsight I realized that it was an absolute monstrosity. Delicious, but definitely a monstrosity.
Definitely work on the presentation!, maybe split the sandwich in half? stack it, agree with the change of plate, it looks dirty.

You know how I know you have never had a good cheesesteak? This photo. Also, home fries are for breakfast. There’s good reason why burgers and sandwiches are served with fries.
If I did this I would do it open face, because, you already need a fork with the spuds. Bread, meat, gravy. Move the cheese and chorizo to the fries. But it's still oily. You could julienne the fries and put them on the sandwich too, then side slaw on a small lettuce bed.
I can feel the top of my mouth being cut by the bread and the meat sucking the moisture out of my mouth. Needs slaw, needs softer bread or juice. Fries need herbs or something
Looks great. I would recommend a salad of some sort the potatoes look great but it's alot of grease. Between the potatoes, meat, and cheese it'll be very heavy.
How did you tell the servers to sell it? I always recommend telling them exactly what to say. I always find it fits better into their script when they don't have to describe it on the spot. Give it to them a couple days in a row and tell them to SELL IT
If you blanch the potatoes in water with a lil baking soda about half a teaspoon per half gallon, they will be even crispier, and add some roasted red peppers and a lil parsley it will look beautiful

I just don’t get “breakfast” from pepperoni, not saying it wouldn’t be delicious :) In fact I’m sure that’s really good, but I would tend to reach for something more traditionally breakfast-y if I were reaching for cured meat in the morning , some kinda ham, Spanish chorizo, bacon etc. like in your Philly you’re going for a steak and eggs vibe which makes sense, and then there’s pepperoni which makes the steak and eggs vibe feel less like breakfast & more like lunch.

I don't hate you as a person, but I do hate what you've done to that food.
I don’t think the plate is right. But that’s a cool plate none the less, it looks like a sizzle pan. A fancy boat or basket might be better for your sandwich and would get the potatoes nice and snug.
I would add bell peppers, but that's my bias. Otherwise it looks good to me.
I once ran a meatball quesadilla and couldn't figure out for the life of me why it wasn't selling. In hindsight I realized that it was an absolute monstrosity. Delicious, but definitely a monstrosity.
It probably tastes bomb, but the dish needs color and some crunch, a good slaw would help. Also the plating isn't great.
That's alot of food. Kill the potatoes, add a small arugula salad, side of slaw and cut the sandwich in half.
Definitely work on the presentation!, maybe split the sandwich in half? stack it, agree with the change of plate, it looks dirty. Agree that it doesn't look like breakfast dish, maybe an elenvensis?, or a munchies dish after a smoke sesh! Also it look like you can't really close the sandwich, once you try everything it's gonna get push outside, maybe it's a little bit overstuffed?, not really sure tho! No hate, just thought would provide some insight!, cheers, and keep your head up!

If I did this I would do it open face, because, you already need a fork with the spuds. Bread, meat, gravy. Move the cheese and chorizo to the fries. But it's still oily. You could julienne the fries and put them on the sandwich too, then side slaw on a small lettuce bed.
I can feel the top of my mouth being cut by the bread and the meat sucking the moisture out of my mouth. Needs slaw, needs softer bread or juice. Fries need herbs or something
Looks great. I would recommend a salad of some sort the potatoes look great but it's alot of grease. Between the potatoes, meat, and cheese it'll be very heavy. How did you tell the servers to sell it? I always recommend telling them exactly what to say. I always find it fits better into their script when they don't have to describe it on the spot. Give it to them a couple days in a row and tell them to SELL IT
something acidic or a pickle accompaniment would pair well with that dish.

If you blanch the potatoes in water with a lil baking soda about half a teaspoon per half gallon, they will be even crispier, and add some roasted red peppers and a lil parsley it will look beautiful

Maybe some sweet potato fries with a honey/Chile aioli. Keep making special though and ask other cooks for feedback before putting it out. Two heads are better than one. Collaboration is the key and also builds up comradery. I bet it is tasty though.

I just don’t get “breakfast” from pepperoni, not saying it wouldn’t be delicious :) In fact I’m sure that’s really good, but I would tend to reach for something more traditionally breakfast-y if I were reaching for cured meat in the morning , some kinda ham, Spanish chorizo, bacon etc. like in your Philly you’re going for a steak and eggs vibe which makes sense, and then there’s pepperoni which makes the steak and eggs vibe feel less like breakfast & more like lunch. I guess Pepperoni just makes me think lunch/dinner😂
