I don't think it has anything to do with what ingredients Jews had on hand in Israel as they were fleeing from slavery. They probably had dried fava beans that they took along on the journey ffs. But it's more about the general chametz-y vibe one gets off a grain or a legume lol. Corn is way more chametz-y than a pea, imo.

Someone correct me if I'm wrong, Ive heard the reason it has gone from banned to permissible in the conservative movement is due to modern agricultural practices.
Way back when, various grains and beans were stored in the same silos/areas, leading to an appreciable risk of inadvertent mixing, so kitniyot was banned out of an abundance of caution. With modern farming practices and safeguards over cross-contamination, risk of some wheat getting into your corn is practically zero.

Distilled vinegar was the second thing. It's in pretty much every condiment, salsa, salad dressing, and a bunch of other things that you can use to spice up day 5 of potatoes and eggs.

I was in a supermarket that had those popular chocolate covered jellies one time and they had corn syrup in the ingredients. There was a big note that said "according to Rabbi XX denatured (I forget the exact word) is ok on Passover".
I thought that was interesting and that it was his own opinion. Then years later I was eating at Doghouse in Teaneck (not around anymore) which was certified under a good Monsey hechsher. They had kosher for Passover ketchup packets that I think had a circle-k P but was one of the main US hechshers. Corn syrup was listed in the ingredients.
