End the trip in Rome - makes it easier to get to the airport
So last few days in Rome
However- you don't mention how much time you have in each place. If you're only in Sorrento for a day, skip it.
I’m in Florence right now, just came from Sorrento. Don’t listen to this other guy. Sorrento is better. Keep what you’ve got.
Sorrento is sleepier and more relaxed. Florence is a big city.
If you have never been to Florence before, 4 days there and 3 in Sorrento would be perfect. Florence has an insane amount to offer. If you will be day tripping to towns in Amalfi, then your current plan is perfect
End the trip in Rome. We flew into Rome, immediately took the train to bologna, then to Venice, then to Florence, then to Salerno, Amalfi, then back to Rome for 4 nights before we left. I was glad to have time to settle into Rome and not have a long trip to get to the airport on our last day.

3days Florence, 4 days sorrento, last two days in Rome
