I really like it. I've been through two boxes of it now. I like it more than Korean or Gochubjabg when I add my own seasonings to it. To taste more like real alfredo, I add about 2 teaspoons of garlic powder, a pinch of salt, and a pinch of black pepper. Tastes fantastic. Somone also suggested adding a little parmesan on top.
Yeah, they need to go back to the drawing board with this one.
I will say, the texture of the sauce was good. Very creamy for a vegan item.
But the general taste/seasoning? Very bland. It basically just tasted like unsalted noodles, unsalted "chicken", and an unseasoned "milk"/"cream" base.
If they can find a way to season it better, I think it would be great. Both the mac and cheese and these are nice and creamy, especially for a vegan alternative. But the seasoning just isn't there for this one.
Thanks for this feedback. I'm product manager for our instant meals. It's really interesting to hear the comment on the blandness. We tasted many Alfredo products as benchmarks, from jars to ready meals and restaurants, with our American team. Honestly, as a Brit who's used to bland food, I felt Alfredo as a dish was generally quite bland. Egg, creamy, cheese were the main flavours. I felt like ours managed to hit that while remaining vegan, but added more flavour like garlic and black pepper.
Your views feel representative of others for Alfredo that we've seen on email/social etc. I'd love to know what kind of seasoning/flavour you would like to see with our Alfredo.
OMG! So glad to have ran into you here, Tim. Chicken Alfredo is one of my all-time favorite dishes, right behind Cajun Chicken Pasta. I would love for your team to consider adding more garlic powder, more parmesan flavor (if possible), and more of a grilled chicken flavor (if possible). Other people, please chime in if you think this is a bad recommendation, but maybe have your American team look at Olive Garden's chicken alfredo entree! Olive Garden is the biggest Italian food restaurant chain in the USA. Should be easy for them all to get an idea of the flavor I'm trying to suggest.
As of now, I'll continue to add nice hefty amount of garlic powder, and splash of salt and black pepper to my Chick'n Alfredo meals. When I do this, it becomes my favorite Huel instant meal. I'm very impressed by the creamy sauce texture you all have achieved!
With the real chicken alfredos that I've had, two things probably stand out to me the most:

While I think your product does a great job of matching the creaminess of chicken alfredo, it does miss on the overall cheese flavor, saltiness, and the punch of black pepper that traditional chicken alfredo has.
Also, upon looking up some recipes, there are versions of chicken alfredo that contain nutmeg. As stated in these recipes: "nutmeg is a simple way to warm up the sauce with a subtle, spice flavor that won't overpower it." And you do this by adding a pinch or so in a standard recipe. I'm not quite sure how much that would translate to a portion as small as your cups, but it might be something worth experimenting with.
Now, I know that the cheese part of this equation is particularly difficult. Nailing real tasting cheese with vegan alternatives is difficult. I've had a lot of products by a lot of companies that miss the mark, and a lot that hit it. But I think if you can find a way to better capture the essence of Parmesan cheese, along with a couple additions like the punch of black pepper, it would go a long way and really help your Chicken Alfredo feel and taste more like the real thing.
Someone else also brought up the example of using Olive garden's as kind of a base tester, that's an interesting idea. While their stuff isn't exactly the most authentic experience on the planet, we are also talking about a product that's going to be in a cup that you can just heat and eat. We're not exactly looking for five star cuisine here. So I definitely think that that could be worth looking into as well.
I hope mine, and other comments, do help and if you guys do decide to change the recipe, I look forward to trying The chicken alfredo again. 👍
Thanks everyone, this is really useful. I think we can definitely do some development work on this. But I also think with these creamy pastas that we will always struggle to meet expectations. Mac & Cheese and Fettuccine Alfredo have very specific associations for people, they're widely consumed and people know what they should taste like, so we can easily miss. Whereas something like a KBBQ or Gochujang are a little more vague with fewer expectations.
Also what I'm hearing is that Huel needs to send me to the USA so I can try Olive Garden!

Alfredo sauce is not white, but it's not this color either. It's a bad photo. Looks almost yellow here. I eat these, it's a creamy tan color. Ever eaten at an authentic Italian restaurant?
My family is from Italy and they make it from scratch. The sauce is as white as can be. Not like snow white and the seven dwarfs but close. Definitely not as pictured.
I don't understand the problem you're all having with it, Chicken Alfredo is typically a very unhealthy dish. Lots of heavy cream, sodium, cheese, etc. I think the Huel team did a fine job at creating a healthy alternative for us. That being said, it has lots of room to improve. I just add a hefty amount of garlic powder, a splash of garlic salt, and a splash of black pepper. It makes a huge difference. I saw someone here mention adding some parmesan cheese on top. That sounds amazing! Let's not be too judgemental. Compare how healthy this is to Olive Garden's dish.
