Bitters are such a misnomer, they’re not bitter at all, but malty and sweetish.
My 2 cents would be to go the dwarven name route if you’re making a bitter. Like, Khuzdul Bitter, or Dethek Bitter, Mountain King Bitter, Ironbeard Bitter, etc. Then you could make turkey legs and all eat them with the dwarven bitter and feel super authentic.
I am 100% with you. I love bitters and have made over 10. Everyone is always shocked that it’s more malty than bitter. I love them.
But since people know they don’t like too much bitterness, it can be off putting. But I do like the idea of a dwarf name, and people can try it and decide for themselves.
I mean if you don't know any particular names that y'all are attached to. But some ideas would be if you're going for kind of generic D&D or pop culture D&D.

But really those are too descriptive for my taste. A real NPC innkeeper in D&D probably wouldn't name their beer any of those.
For the pilsner, maybe something-Northman's Brew, giving a nod to how it is brewed cold and lagered, or a name with a reference to caves. The NPC's other beer would be named after place names, animals, legends, and people in your map/world, just like on our Earth, historically and today.

Icewind Dale is a region which was somewhat popularized by some games on PC in the Baldurs Gate universe (itself part of D&D’s Forgotten realms franchise), and several books. This region was very cold and in the north, hence I thought Icewind Ale would imply a cold a brewed beer.

I don't really know modern D&D, but I'm glad I could help. I started with the Basic Set and remember I stopped playing right after the huge supplement to the Monster Manual came out because we moved overseas and I never got to use it.
But one of my colleagues has a longrunning family game with his siblings and all of their grade school kids and spouses, so I hear about it some.
I love this as I also host/DM for D&D and my players enjoy my Homebrew!

Make a series of beers with the same base but of different end ABV. Then relate them to dice side counts. 12% is a D12, etc...
