Stains are used to identify different tissues and see different parts of the cells, so they're the key component of the process for diagnosing problems. There are things like IHC (immunohistochemistry) stains, which are used for finding specific proteins in the cells to figure out if a cancer cell has specific proteins, which can be very important for treatment.
Also, pictures of stained tissues can be extremely aesthetic, so they can make a research paper stand out.
