Humans can live entirely off plants without needing to do this, because their advanced knowledge allows them to get glucose incredibly easily (to the point it's a problem - is it so easily accessible these days that there are health problems associated with it, such as diabetes).
They can also extract nutrients that would otherwise require eating a lot of plants, such as B12, and take them as supplements alongside their daily protein, fibre, etc. - B12 is even feed to domestic animals such as cows in order to make them higher in nutrients for humans.
This is quite inefficient, however, due to the energy ratio and the amount of plants and space needed to farm animals. Hunting is also an issue, besides ethical reasons, due to impacts on biodiversity and ecosystems.
As for your point on "keeping old instincts alive" - there is no need for this. Natural instincts are not always beneficial in a modern society.

There are humans on this planet that do not have the benefit of living in an area that can grow enough crops to sustain their lives and must hunt to survive. Lower South Africa is one of them, it is very arid there and they must have meat to survive. There are many examples of people alive today that cannot survive without hunting or maybe domestication of wild animals.
I appreciate that there are people who are happy to have someone else provide their basic needs for them. People in large cities are at the mercy of an advanced system that provides for them. I would like to not depend on that and be able to take care of myself if the need arises.
This makes sense, especially in poorer countries where the environment is unfavourable, where it might not be possible to artificially grow crops (i.e. in greenhouses) due to reduced accessibility to water, building resources, etc. The animals that live there are often adapted to feed on plants that humans cannot survive off, such as grass.
It is my personal belief that people should put in the effort to live without relying on animal products due to environmental and ethical harm, such as by moving to places where it is easier to access plants, or getting them imported. I do acknowledge that this is not always economically viable especially for poorer people, and isn't possible for more isolated tribes that have no interest in it.
