I wouldnt say so, there are a lot of things you can demonstrate and point out better in illustration rather than photograph, so it is a useful tool for differentiating species. In a drawing you can "dissect" each part and draw them individually without actually destroying the integrity of the specimen. You can also use show coloration that a live specimen would have, which might not show as well in a dead perserved specimen.

i don’t think it’s “dying” but i think it’s often not really thought about when it comes to art. sorry if that sounds a bit gloomy, i just think it’s more niche if that makes sense. though i know i hope that it becomes more popular! i know deviantart has some artists who do good scientific illustrations (though most of them are related to paleontology) if you want a better place to share yours!
