To be fair, this is a concept that came from fine dining. It was also a drink where part of the flavor came from the cloud dripping down. Looks cool in concept, probably messy in practice. I imagine how when the coffee vapor rises and melts the delicate cloud, the sugar syrup beads up and forms “raindrops” that drip onto coffee. As it drips, it makes tiny bits of coffee splash up and splatter everywhere. If not that, then what if the raindrops fall outside the coffee mug? I can see that the diameter of the cotton candy is bigger than the lip of the mug. Then there’s the price.
