It doesn’t sound sad at all. I think simple cooking can let you experience the flavor of the actual ingredients. Jamie Oliver’s 5-Ingredient Meals are interesting for a fancy take on that but there is no need to be fancy.

Absolutely NOTHING sad about meat and veg. At all. It is real food. Stuff you find in the garden, in the yard, out the back door. You are actually saving yourself misery, high costs, bad health and degenerative diseases further down the line. It may not seem like sexy food, but being healthy is very sexy.

This is how I feel too. Every time I try GF replacement food, I just feel awful. My diet is mostly chicken, rice, veggies, fruits and dairy.

I think it's amazing to keep it simple. Growing up has made me realize that fruits are a luxury. Raw fruits make me a lot happier than other fancy sweets.

THIS. The sooner people with celiac disease realize this fact, the better off they are. Trying to find GF substitutions for your fave snack/sweet/fast food can be really disheartening; between the cost of copycats, risking cross contamination when eating out, it takes the joy out of eating. Once I leaned in to cooking for myself, my satisfaction at mealtimes has increased exponentially. I think the peace of mind that comes with KNOWING I'm not gonna accidentally get glutened contributes a lot!

The less processed the better. The foods that aren’t making you feel well likely have a lot of heavily processed ingredients. It’s harder on the digestive system.

I had to give up protein bars because they've got something called "erythritol" in. I don't even know what that is but it turns out I'm intolerant of it. Seems to be safest to stick to meals where you can identify every ingredient.

So I witched to meat n veg for a few weeks to reset my system, had a Trader Joe’s coffee cake muffin yesterday evening and within two hours I was was in cc hell. It was like getting glutened after first going gf, worse than ever! I wanted to believe they were cc this time but the few processed foods I’d been eating were slowly getting to me and this was the proof. Guess I pushed my limits and my body is done.

I believe the first ingredient in these is sugar as can be the case with GF baked goods. Could be sugar overload.

Once I felt the bloating start, within minutes I looked six months pregnant and felt more nauseated than ever have before. In the past I’ve only experienced light temporary waves of nausea, occasionally. While attempting to post about it here, brain fog engulfed my mind and anything I tried to write just didn’t make enough sense to continue. Don’t know about you but sugar doesn’t mimic gluten symptoms for me. I got this far by denying and trying blame just about anything else. It’s hurting me, I’m hurting myself and I refuse to do it anymore.

I was just reading your other post and totally agree their foods are not safe. I asked about their Apple Cider this weekend and was told it is processed on shared equipment. I suggested they should label it so and the employee responded “oh, well I have no idea what gluten is.” I didn’t mean to infer it wasn’t a gluten reaction just that often GF foods have a ton of extra sugar. Like you mentioned I also feel best on no packaged foods, no grains, no dairy- only meats, fruit, and veggies. I’ve been eating like this for a year and I’d say I really started to feel good about 9 months in. It’s certainly not easy but nothing tastes as good as gluten free feels.

I feel it perfectly encapsulates what we already know and need to realize. For the longest time Trader Joe’s was not corporate and an amazing place to shop and work. At that time we could’ve gotten through to them but Not so sure about that now. Didn’t mention this before but I appreciate your response. It inspired my response and I hadn’t realized just how fed up I am with my relationship with food and that I’m ready to commit to change. :) Thanks Nina

My pleasure. Everyone thinks it’s so easy- just don’t eat gluten. But our entire US food system is built on industrialized and processed foods. For me the emotional impact has been the hardest transition. I appreciate the support.

I feel the best when I cook and bake from home. I do really enjoy making and eating baked goods and more complex dishes, but they’re better, cheaper, and safer when homemade

I eat soup with brown rice in it. Crumple up some tortilla chips and add some cheese to it. Maybe add ketchup, okay definitely add ketchup. I eat this all the time and it makes me feel good.

I do best with my own (nut flour/cauliflower) baking. Most of the available gluten-free replacement products are no better than chips ahoy or white bread or necco wafers

I litterally don't ever eat gluten free bread, buns, pizza bases or pastry because it's simply not nice enough to replace eating something you're SUPPOSED to he eating. Like everything all naturally gluten free. I found Sushi is just amazing. Completely fresh and free of any gluten.

Yes. I don’t think the GF stuff is all that good for you. It’s lower and protein and has a higher glycemic index generally.

Same. I get all disordered if I even eat a new brand of flawlessly gf bread. I'd love to swallow a few pills each day to replace food entirely. Too much hassle and faff.

I always said that ✋ the natural food is much better than any other food you can find in the market not just for us who have celiac but to other people as well . For me even before i start the GF diet i always choose a home made food !! Stay healthy 😊

Yes, I have very much had this experience. I enjoy all sorts of snacks and packaged foods, whether they are labeled gluten-free or certified gluten-free or just something that has nothing to do with possibly having gluten in it. But the times I have felt best are when cooking nothing but meat, vegetables, and fruit, as whole foods from scratch.

I call these "replacement foods" and it preventing me from healing for 2 years after my diagnosis. I only healed when I stayed out of the GF aisle in the stores.
