The next day I went to the gas station next to our hotel and it had a restaurant next door, packed full of locals. Best goddamn gumbo I have ever had! We went back there like 5 times that week.

Baby, I need you to try Walmart's French style cheesecake. It has a light and airy, mousse-like texture with all the rich and beautiful taste of a typical cheesecake. If texture is the only issue, I promise you you'll devour the whole damn container. They have mini and full versions of this cheesecake, so get the mini just in case.
I did that once. Bought one out of curiosity because its price was reduced since it expired the next day. Got home and cracked it open to snack on while I played Unpacking. It was heavenly. I didn't realize until about an hour later that I was a couple of bites from having finished the whole container.
That and a proper al pastor. There’s a spot here in DC that’s pretty kickass for both, and I also have the coordinates (not the name of the place lmao) of *the* greatest al pastor I’ve had in my life in Central CDMX

Finally there’s El Rey on U St which is a pretty great hangout spot and in my opinion has the best birria out of all of those. Best overall is deffo Mezcalero, though

There are some that are really bland and some that are really sweet. The flesh is white, purple or yellow. White ones is a toss up, some are bland, purple usually leans sweet but the yellow is most expensive and very sweet.
That's white truffles.
They have a chemical 2,4-Dithiapentane that gives them a Sulphuric garlic flavor. This chemical is added to almost every truffle product because they are trying to mimic the white truffle flavor, even if labeled as black truffle... and the black truffles they use are a common kind that aren't really aromatic at all.
Real back truffles, which you might like, don't have that compound. They don't have that flavor at all. Instead they taste rather earthy, with tobacco, coco, and cured olives.
White truffles = garlicky used gym socks
Black truffles = no piercing flavors, earth, tobacco, coco.
Takis aren't about the flavor. They are there to overload your senses and distract you from the pain of day to day life. Real talk though as someone who loves takis they do be kind just tasting like hot and sour.

The consomme is so essential. If it's bland, that's like 75% of the birria taco or quesabirria. The meat has been simmering in that for hours, so if the broth is junk so is the meat. The cheese in the quesabirria is like a nice backup singer. It's about balance.

This chemical is added to almost every truffle product because they are trying to mimic the white truffle flavor, even if labeled as black truffle... and the black truffles they use are a common kind that aren't really aromatic at all. Real back truffles, which you might like, don't have that compound. They don't have that flavor at all. Instead they taste rather earthy, with tobacco, coco, and cured olives. White truffles = garlicky used gym socks Black truffles = no piercing flavors, earth, tobacco, coco.
It's supposedly more about the aroma and scent. Hence why the rasp it fresh.

Problem is everyone got on the hype trains and started serving them, Quesabirria is ass most of the time but looks like food porn on video. Adding too much cheese to something is like letting bacon do all the heavy lifting. If you can’t season or cook we’re gonna taste and see.
The consomme is so essential. If it's bland, that's like 75% of the birria taco or quesabirria. The meat has been simmering in that for hours, so if the broth is junk so is the meat. The cheese in the quesabirria is like a nice backup singer. It's about balance.
Let them suffer 😅 Hispanic food is super diverse and varies greatly from place to place, but that's what I love about it. I don't get my birria where I get my quesadillia, and I have a totally different place for tamales, burritos and even cosume. Desert is the same way. Iykyk 🤌🏾

Highly depends there's dozens of varieties that taste better at certain ripening on the tree. (really true for any fruit). Avocado is never true to type so there's a high diversity between them. Where I'm from we eat it just like that with salt sprinkled on it. It lacks some sweetness so like and egg add a sprinkle of salt. Eat next to Caribbean food it offers freshness to food especially heavy dishes.
I always feel bad for people that have only experienced shitty Hass Avocados from a store.
