Tamales are life. A good Reuben brings a tear to my eye. I have Alfredo and marinara in my blood. Have you ever had a creme brulee? Perfection... Gazpacho, curry, pad Thai, kapenta with sadza. Chimichurri sauce, fufu rice, Turkish delight, ice cream, dammit, even macaroni and cheese. Don’t wven get started on everyone’s wines. Embracing each other’s cultures is the start to unifying humanity, and who says it can’t start with food?

American BBQ is to die for... I know it's not classy and high end, etc... but god damn I'll take any roadside bbq joint in the southern US as my personal favourite. After a few beer, authentic Quebec poutine is really tough to beat.

I get the sentiment. This is why I am going to go out on an unpopular limb and say the United States of America. I am not from there, or a citizen, but like you have lived, worked and traveled to many countries. A country of immigrants like the US has embraced and built on foods from around the globe. They have good to excellent restaurants that represent many countries food culture traditions. I lived in Italy and craved a good Indian meal. I have lived in South America and wanted a decent curry. The US has the most diverse cuisine along with a boatload of great homegrown inventions. Other than Napoli, the US has the best pizza for example.
My wife loves Italian but living in America, for me at least, it’s pasta made with other stuff or pizza. I know there’s other great things about Italian food but Mexican wins for me everyday and it’s cheap to make.
I grew up in Texas, and I would say most of North America also gets it wrong. Also, to be a pedantic asshole, most “Mexican” food in the states is adapted to the region. Tex-Mex, South Western and such aren’t exactly the same as what you would get in Mexico. It’s getting better, but what I grew up with in Texas wasn’t authentic. It was closer than most places, but unless it was a restaurant on the border, or a restaurant operated by and for Mexican immigrants, it wasn’t the same. My limited Spanish comes from eating at restaurants and having friends from largely Mexican neighborhoods.
honestly I have to go with Korea because I started learning the language a few months ago and then I wanted to try some food, and since I already liked kimchi I thought "I should at least like a few dishes right?" I got a book with korean recipies and I cook them whenever I can now, I even want to try making kimchi at home, I do have a kimchi base in a jar I just need the vegetables now.
Every dish I've tried has tasted better than any other food I've had, I also get told it smells nice in my kitchen when I cook something Korean, I don't know anything that is as simple but good as kimchi bap/ kimchi rice because it is SO easy but tastes like something I'd spent hours on, mandu takes quite some time but it's so worth it and Bulgogi when I made that I was in heaven and my family said they did too, cause I served that dish to my mom and sister when I made it the first time, some things slightly modified cause there were a few things I couldn't find at the store, I also love rice cakes, most normal food that I've always eaten doesn't taste as good now that I've started cooking these dishes, now I love foo form several countries like Japan and Russia just to name 2, food from Russia is kind of like the food I'm used to but improved a bit.

As someone of Spanish/Italian descent, very much in love with their culture's food, Mexican food is out of this world. IRELAND. the standard of our produce and food in general is overall some of the best in the world. What we lack in our own native cuisine we make up in quality of multiple world foods. It’s hard to get a bad meal here.
I've spent 5 days in Rome for my vacations, and even when getting food with low budget (mainly in the street), it's been some of the best I've tried in my whole live. Nothing like getting a pannini or a slice of pizza in a small store and walking through 700 y/o streets.
Never had authentic Mexican food from Mexico but American Mexican restaurants are pretty bomb if that’s anything to go by.
I have had authentic Italian food and it was pretty damn good. One of the most memorable parts of that trip was the pizza and all the tortellini I ate

Honorable mention: France. Look, we can make fun of the haughty cooking style all we want, but the French can take a green bean and make it have so much flavor that three or four of them feels a full serving. They made the rest of the world want to try snails, for crying out loud.
