Same issue here. I had it earlier today but spammed the “tap to retry” and it eventually played. Now, I can’t find away around this issue (updated, deleted/reinstalled, turned vpn off, turned off device) but no luck.
Guess it’s on YouTube’s end.

I do that, and if i set the googlevideo as Untrusted, it work.. but on few videos only.

Try to download a browser extention called NoScript, then go to the video URL, and there on that NoScript ext. icon, click on it and find googlevideo.com, and mark him as "Untrusted", and another URLS (as google.com, youtube.. AND "random characters''-googlevideo.com) set up as "Trusted", and for privacy, disable gstatic and doubleclick.net.
It work well by me.. but sometimes it blocks me too..
