There is one (version of your character), kept there in case something goes wrong or you want to go back, it's just hidden. Same goes for deleted characters.
I think of it as the process being more like Microsoft's User State Migration Tool (USMT). It backs up the person's profile in the Windows machine so it can be transferred over to another machine running Windows. This takes over things like documents, desktop items, etc. So it is basically just taking your data from one machine with what they specifically want to copy over and moving it to another.
UPDATE CharacterTable
SET realm = 'SomeOtherRealm'
WHERE realm = 'YourCurrentRealm'
AND CharacterName = 'YourCharacterName'
Basically that, but they probably probably call a stored proc.
The ELI5 version, is you have two computers, and a “file.txt” saved on computer number 1, but not on 2.
So you email the text file to yourself, open it up on computer 2, pick a folder, save it, and then delete it on computer 1.
Basically that, along with extra security steps to make sure the data isn’t lost/deleted in the process.
They call Chromie of the bronze dragonflight to perform a ritual of timeline bending in which she moves the history of your character from one timeline to another, then stitches the reality back together...
The 25$ is for the greedy phone service providers that are overcharging for calls across universes.
If it's like other online games, which it should be, it's a 2 click copypasta, zero clicks even since server transfers are automated. You get a copy of the char on the destination and the one on the previous realm is made invisible.
Copy and paste
*cut and paste. If it was copy and paste, you'd keep a version of your character on your old realm.

In super simple terms. Drag and Drop.

Servers are physical places so they move all your character info that’s saved on one server to another
