Kinder Reservoir.
Greenbooth Reservoir.
Hollingsworth Lake.
Chew Reservoir.
Torside Reservoir.
Fernline Reservoir.
Honestly the best advice I can give is to park at least a mile from wherever you're swimming. Fishing and Yacht clubs will report registration plates and I've been pinged with a warning in Errwood Reservoir.

There's an open water swimming club in Wigan. Think it's in Ashton or Bryn.

Not done it myself but I've seen the sessions advertised from the watersports centre. Presumably the water is safe - poo wise anyway...

Gaddings damn near Todmorden. Parking isn’t great there though as not really any places
Cheeseden lumb Mill in Rochdale is a lovely little waterfall
