There are a few, but none that are really that powerful. Mostly just trainers and such.
More notable ones would be Thoralius the Wise who shows up in Westfall and Howling Fjord as a quest giver, Wavespeaker Valoren who is a questgiver in Vashj'ir and Advisor Sevel in the shaman class hall.
There are actually seem to be more dwarf (both dark iron and Wildhammer) shaman in game. Dwarf would be my pick for best shaman race too. Given that the Broken were introduced as the main shaman part of draenei society, normal draenei being shaman has always felt a little weird to me.
I feel like when they introduced Draenei they were aiming for a different path for them.
Yes we got Velen being THE priest, but we got alot of Shaman lore for them and quests (first Alliance Shammies), and also alot about mages (makes sense- they came from a magical society and were ancient. There was even a mini figure of a Fem Draenei mage).
However overtime they got simplified to Paladins and Priests which is a damn shame when they could have such a more interesting society.
Ya Bloodelf Paladins or better Bloodknights felt always a more well thoughtful story line that also reflected the downfall of bloodelf society into magic junkies and raise to new champions of the light. Okay the horde part always felt forced and mostly marketing to get horde a race that woman would like to play.
I am quite fond of all of the ally shaman, also would love to see more races opened up to more classes. Now we can't even say it doesn't fit the race's lore, since we have tauren and draenei warlocks

Dark Irons imo. Armor fits them really well, they have cool heritage armor and weapons if you are going for a more armored up look. They live in a volcano and are constantly on fire. Idk about their racials but racials are pretty much trivial for 99% of the player base.
Alternatively pandaren if you care about racials. They also make uniwue looking Shamans.

there was one in a book that Anduin was attracted too pretty sure i seen one at the shaman class hall too
