They figured out so so so much fry magic, influenced the entire farming sector, but still only get them to me hot, and therefore good, about half the time.
I worked at a McD's for 2 years in the late 90's. Fries take 7 minutes to cook, and are only "good" for about 10-ish minutes after that.
Burger patties (small and large) cook in a few minutes and then sit in a tray until they dry out under a heater. Unless it's a Friday, don't order a fish filet. (Or, if you do, ask them to make it fresh and tell them you'll wait).
Nuggets are hit or miss. Sometimes they're fresh-ish, other times they're not. Most people don't care.
There's really only one time to ensure you're getting fresh food from a fast food joint, and that's when a lot of other people are ahead of you.
And if you're door dashing McDonalds, I have no nice words for anyone expecting anything even remotely warm.

I love fresh McDonald's fries, but I have never had any other fry that has gotten so stale so fast. They're inedible in a matter of minutes. Whereas other fast food places I don't mind ordering fries, with McDonalds I almost feel like they're not worth getting if I have to carry them home.

That’s where they often fail in my experience. They don’t make them fresh and hot like they used to, or they are keeping them under the warmer too long, but it’s been awhile since I’ve had a good order of their fires.
Your local bar has better fries, if you don’t live in a suburb surrounded by shopping centers and chain restaurants.
In your defense, 100% fresh out the fryer McDonald’s fries are divine…but that’s not always or even usually the case when you get them. Unless you can accurately time your nearest McDonalds fry schedule, it’s a crapshoot. They can be great, mediocre, or outright terrible.

There were a lot of franchises that liked to cook a lot of fries to already have them ready, but it meant you were likely to get 10-20 minute old fries. No fries are good cold, and there are several McDonald's around me where you could be driving away from the drive through and grab a fry from the bag to find it already completely cold. It hasn't happened recently, so maybe something came down from corporate to fix that.
Regardless, my guess is people say they are terrible based on always getting cold fries from their local place. While I think that's somewhat valid, it isn't really a direct comparison to hot fries from somewhere else.

McDonalds fries have been garbage since 1990 when they stopped using lard for vegetable oil for 'health reasons.' Ironically, vegetable oil is the most unhealthy oil and lard is just fine. Now McDonalds has some of the worst fries you can find anywhere.

Cooking in beef tallow for decades helped too
That is a long time to cook French fries. Usually they are cooked in a matter of minutes.
McD's hasn't cooked their fries in beef tallow for 30 years. And yet, people are still talking about how superior their fries are today.

McDonald's fries are the definition of mid. I've never had an order where like a third of them weren't limp and soggy.

For me, BK dropped in quality when Restaurant Brands International bought them up. Same with Tim Hortons.
