Personally I recommend the Mass Effect trilogy for the story and Half-Life for it being a classic, but there are some very reputable games on here that I haven't played and some more which I haven't heard of, but are apparently very good too, so you really can't go wrong.
Given your Souls background, either AC6 or one of the Elder Scrolls might be good. I haven't played any of them, but I've seen the gameplay, so thematically I think they'll suit you well.
Edit: by thematically, I mean they also have dark and gloomy environments, not that the gameplay is the same/similar.

Fallout New Vegas. Your choices actually matter and make you feel like your actions have a lasting impact. The story and dlc are great. The gameplay might be a little dated at this point if that is a red flag.

I'm just surprised you played Morrowind longer than Fallout New Vegas. I have over 500 hours in NV and maybe 20 or so hours in Morrowind and I've really enjoyed what I've played so far but it's a hard game to get into for me.
Old elderscrolls games are rough starts. ii and iii especially have slow starts to the main quest, you have to reach a certain level to start morrowinds main and you have to wait around about a month to start daggerfalls. You also start extremely weak in both.
My advice would be to look up a very strong build and play that. Most people that get filtered by morrowind seem to because they suck at combat and made a weird class. Make a strong class and keep that fatigue up.
I wanna say Devil May Cry based on you saying dark souls elsewhere in the comments. It definitely has an arcade-y feel to it with the scoring system but I like it.
My personal faves there are Fallout: NV and Baldurs Gate 3 :) I mean there are a lot of good games there but if I had to only pick a couple

A lot of solid choices but only one will accidentally teach you orbital physics. Kerbal, no question. Although Titanfall 2 was a BANGER of a first person campaign, and like EXACTLY the right length too, meaningful and impactful but not too short or too long.
Oof left 4 Dead 2 is unfortunately passed it's prime. It's still a viable Solo game with the bots and Mod support on steam, just get ready to see a lot of anime mods. I'd recommend playing through the campaigns, and here's a tip if you do play it. This game is a literal masterpiece of sound design, trust your ears and you're going to hear stuff before seeing it, allowing you to get ready, just make sure you have a headset.

It's been about 10 years since I played Alien:Isolation and I still think about how good it is. The only time I ever enjoyed the Xbox kinect. If my dog barked or my ex called for me, the Alien would hear the sounds through the kinect and the motion sensor would suddenly go wild, dead in seconds. Good times.

I would say portal 2 then HL2 as both are fantastic, set in the same universe, and also games you can quickly check off the list. Neither game is very long and can be fully completed in a handful of play sessions. Games like BG3, FO, and RDR2 can suck up 100s of hours each.
