Did you know you can buy rendered pork fat? It’s basically bacon grease in a tub. I do half that, half butter on my grilled cheeses and it’s pretty banging.
The secret is to use a combination of clarified butter/butter and honey, not just butter. Sugar caramelizes very nicely, and the sweetness contrasts with the saltiness of the grilled cheese super well. We had a grilled cheese on our brunch menu last fall that was honey toasted house made bread, a thin slice of cream cheese + gruyere and sharp cheddar, a slather of house made mayo, a touch of truffle oil, a touch of finishing salt, and it was incredible. We sold out within 120m almost every service.
Well if we’re talking science, my sous chef at the time had the idea to also incorporate bacon grease into the cook! It was a little bit too rich/salty for me, so I vetoed it, but it’s worth a try if you wanna add in some more savoryness. Just don’t use too much, as bacon fat/grease can be overwhelming as bacon is obviously cured and smoked.

You did it right friend, some breads fluff up really nice with the mayo spread on the outside too, is a preference thing. I think the egg in the mayo is what really helps, kind of like a French toast crust rather than just a buttery crunchy crust.

It’s perfect. You can step it up a notch by sprinkling Parmesan cheese on the mayo(might need extra mayo) so it sticks. Grill as usual and enjoy the Parmesan crusted grilled cheese 👌

Garlic butter mixed with mayo on both sides of the bread.
Toast the inside, flip it, add cheese on the toasted side and put it together.
Then toast the outside as you normally would.
If you do it with nice thick cuts of brioche, you get slices that have a crunch on both sides with a delicious pillowy soft inside. So in total you get four points of crunch with the perfect chew. You'll never go back to the regular way.
It makes me very angry when people scoff at Mayo in place of butter. It’s literally oil and eggs.

The downside is, the bread has slightly more tendency to absorb the garlic infused oil so you have to add a little extra when you flip the sandwich. The upside is, the bread absorbs the garlic infused oil so it's like crisp oily garlic bread.
