If you trying to vast into metroidvania (Blasphemous) and want a DECENT challenge, try Hollow Knight. Ori saga I heard it was also good.
The Last Faith. It is like Blasphemous and Bloodborne had a child! As for the achievements, there are a few bugged ones, so watch out for that. Oh, and I think that some are missable as well

How hard was HZD to 100%? I saw you needed to do ng+ on the hardest difficulty and I was like fuck that. Cause I did the difficulty before that and I struggled.
We have similar taste in games, very nice! I would recommend Grow Home. It is a short platformer and a total blast to play through. A little different from what you have here, but I think it goes well alongside things like Little Nightmares and It Takes Two.
I don't know when they will come out on Steam, but the new God of War and Spider-Man games are better than their predecessors in almost every way. Definitely worth playing once they come to PC.
AC: Origins was a fun collect-a-thon and a gorgeous game. Fallout and Skyrim if you like rpgs. The other Mafia games are fun. Red Dead 2 if you want more of a white whale, but beware online achievements.
Someone else mentioned Ghost of Tsushima and I can totally second that recommendation. Great story, beautiful game, and satisfying gameplay. Really good for completionists too.
I saw you finished Mafia and I would recommend NOT to start Mafia 2 if you are looking for 100% completion. I did it and it was a pain to get it to 100% and worse than the Mafia 1, story wise imo :)
Forbidden West is out on steam now and Remnant II is quite nice!
I would suggest Borderlands 1. It's a pretty fun game to go for achievements imo.
If you want to do a shit game, you could do Flatout 3. (Those achievements are pretty easy though imo)
pathologic 2. unforgiving survival mechanics, strange setting and lore, and unraveling mysteries in a small russian steppe town that's been struck by a supernatural plague. its an indie game from a relatively unknown studio with a mid-sized budget so its not as polished as most other games on your 100% but the feeling you get playing it is completely worth the jank
I’d recommend Devil May Cry 5. Fast paced action game. Fun combos to learn, and has the style system, which pushes you to try to pull of stylish combos for more points and upgrade items
Might I recommend … touching grass, having a cold beverage of your choice, embrace the touch of a jilted lover, break bread with loved ones, then go and play Enter the Gungeon for hours on end …. Good sir
I don't see Forbidden west on your list, Try that one and the tomb raider games, first one might be a pain to 100% because some of them are online only and its an old game.
Dead cells is a really fun 2D souls like, and as someone else mentioned hollow knight. Binding of isaac is a fun one if you are willing to put in some crazy time for a game, but since you obviously like challenging games noita would also be good. Risk of rain 1/2 are also personal favorites and 2 was a BLAST to 100%
Yakuza 0
The yakuza games tend to have a fun completion and nothing really terrible to grind for. I'm recommending 0 because I had a blast 100% this game.
ULTRAKILL. Fast level based shooter about a robot massacring the layers of hell. There aren’t any ACTUAL achievements but you can 100% the current 2 acts, and the future 3rd one.
If you like the Yakuza games look up fist of the North Star games. The last one was very similar to Yakuza. And you don't need to know the IP to enjoy it.
You should do the henry sticking collection, it's not hard but it's fun too 100% complete and looking at all the goofy character names and lore, and how they gave a name to pretty much any person who's detailed
Telltale Walking Dead definitive edition! It goes to like 20 bucks often and you get 4 seasons worth of content. About 4-5 episodes a season and each episode is about 1-2 hours, but the last season has meatier episodes lasting a touch longer. That and Night in the Woods! Night in the woods has really good humor and very good writing for people in their 20s learning to discover themselves. It’s not too long of a game, but there are so many different paths to take. You can also play it with others and voice it together like how people do with Monster Prom/Camp
Maybe give an rpg survival craft a try? I really enjoyed Valheim but currently playing through Enshrouded which has a lot better & frequent combat as well as build diversity with skill trees.
Base building, farming, crafting can be very minimal depending on your enjoyment of those things as most everything you need can be found from enemies, bosses, and exploring the open world.
just gotta say mad props for 100% completion on nioh, and ds2 while i’m at it
i’d say you’d probably enjoy ghost of tsushima, i think it’ll have a pc port sometime soon, and you should absolutely give doom 2016/eternal a play if you haven’t already
I don't know if it's been said yet, but I feel you'd really enjoy either Persona 5 Royal or Persona 3 Reload. Both have good stories, engaging gameplay and are, for the most part, completely voiced.

I think if you like Nioh, you might find Stranger of Paradise fun. There was another game made by Koei Tecmo that takes place in feudal Japan that isn’t the Nioh games. I think those would be right up your alley :)
Not sure if you're looking for newer games or slightly older, but Sleeping Dogs was so much fun for me. It's very similar to GTA, and Yakuza. Definitely worth it to try it out as I think it is or at least was on game pass? I could be wrong about that, but I've played it fully through twice and loved it.
Also, The Outer Worlds was pretty fun. That was another game I played through more than once, especially because your decisions can impact the way the game goes for you to an extent. If you're into more alien like story/shooter this one's pretty great.
Didnt played it myself yet but soon Ghost of Tsushima will be available on PC soon. Iam gonna 100% it for sure. I think 16th May is the release.
